Background & Founder's Dilemma

Kelvin Van Rijn, founder of The Fritter Shop in London, Ontario, had captured the local market with his authentic Dutch fritters. However, growth had plateaued. He wanted to expand across Ontario but faced a classic founder bottleneck: constrained by personal operational time and capital without risking quality dilution.

Customer Journey Insights

1. The Sensory Experience: The warm bakery smell and in-person ritual were central to the brand. CPG licensing was ruled out as it destroyed the sensory magic.

2. The Founder Bottleneck: Kelvin personally handled quality assurance. Managing multiple corporate locations would cause immediate burnout.

3. Value of Local Ownership: Community-rooted franchisees were far better positioned to preserve local gem authenticity than distant corporate managers.

Rather than proposing high-level abstractions, we researched concrete real-estate storefront listings, exact renovation cost models, and unit-level cash flow projections across target cities (Waterloo, Toronto, Oakville).
